Very Berry Tropical Mint Smoothie

Holy summer, it is freakin’ hot outside! And in my opinion there is nothing quite like a cold fruity smoothie on a hot and humid day.……am I right or what!? It also hit me the other day that we are already half-way through summer, time is flying by so fast.

If you follow me on Instagram, you probably know I am one of the few fortunate New Yorkers to have a rooftop garden. You can check it out here and follow along for all the plant lady things. Anyways, this year I grew mint in my garden and have been adding it to my smoothies. I had no idea how incredibly delicious a few little mint leaves could make a fruit smoothie, but damn. I’ve become absolutely hooked on this “Very Berry Tropical Mint Smoothie” recipe that I came up with and have been making one almost daily. Thank goodness my mint plant is thriving and able to provide! Since it’s so hot outside and I live a very active lifestyle, I’ve been adding in some coconut water instead of a nut milk for a little extra hydration.

Very Berry Tropical Mint Smoothie

INGREDIENTS

1/4 c frozen pineapple
1/4 c frozen mango
1/4 c frozen strawberries
1 frozen banana
1 açaí packet (I use Sambazon Original)
1 handful of fresh spinach
1 handful of fresh mint leaves (about 10 leaves)
2 tbsp chia seeds
1/2 c coconut water (I use C2O Coconut Water)
1 scoop Vital Proteins Marine Collagen (optional)

INSTRUCTIONS

Place all ingredients in a blender, pour into a cup (preferably plastic-free ;) ), and enjoy!
