As many of you know, I am from Alabama where the fried chicken is at it’s finest and everything is cooked in butter. While it’s all delicious, it doesn’t accommodate to my dietary habits and it sure as heck isn’t the healthiest of foods. Anyways I am back in the south visiting my mom for her birthday and when I saw pancakes pop up on my Instagram feed this morning, I got a major craving, but I ran into a little dilemma when creating a recipe. My mom’s cabinet and fridge were lacking some essential ingredients to make vegan pancakes so I had to get crafty with my recipe…..and this is where I introduce you to my yummy “Everything but the Kitchen Sink Healthy Pancake Recipe.”
Everything but the Kitchen Sink Healthy Pancake Recipe
-1 ripe banana
-3/4 cup unsweetened plant-based milk (I used almond)
-1/2 teaspoon vanilla extract
-1 teaspoon all-natural honey
-1 teaspoon olive oil + a little extra for the pan while cooking
-1 cup gluten-free flour
1 ½ teaspoon baking soda
In a bowl, mash up the peeled banana and add the plant-based milk, honey, and olive oil. Give it a good quick whisk.
In a separate bowl, combine the flour and baking powder and mix together. Add in the wet ingredients and whisk until all is incorporated. Its optional to add some blueberries to the batter if you’re wanting some fruity flavored pancakes. After mixing the ingredients, let the batter sit for a few minutes.
Brush olive oil onto a flat pan or griddle and turn to medium heat.
Pour pancake batter onto the pan and let cook until bubbling in the middle, then flip!
Stack the pancakes and add your favorite toppings!
-Fruit: strawberries, blueberries, banana
-Maple syrup or honey (I used honey since I didn’t have maple syrup!)
-Cashew or coconut yogurt
-Chia seeds or granola
