Honey Coconut Turmeric Bread

I will be the first to admit that I am far from chef and don't really enjoy being in the kitchen. Hence why this is my first blog post under the "Recipes" category, but I am trying something new! I actually find it to be quite stressful, unless it's to clean up from the yummy meal my boyfriend cooked, because I am weird and like to clean.  If you also fall into the category of "kitchen avoiders," you may be wondering what I eat and how I maintain a healthy diet so I will add that topic to my list of blog post to share with you....staying inspired to blog more was one of my 2018 intentions! Now enough about my kitchen problems and more about this Honey Coconut Turmeric Bread! The past few weeks my body has been craving earthy spices such as turmeric, ginger, cumin, and cayenne. This craving is actually the reason I baked this delicious loaf of bread, which requires minimal ingredients and is super easy to make. Although some may considered this loaf of bread a "sweet treat," it is made with lots of healthy ingredients that fight inflammation, improve gut health, build a stronger immune system, and so forth! Oh and did I mention it's gluten-free?!

Honey Coconut Turmeric Bread

{with Collagen Peptides}


PREP TIME: 10 minutes
COOK TIME: 30 minutes
TOTAL TIME: 40 minutes


+ 3 large organic eggs
+ 3 large organic egg whites
+ 1/2 cup Califia Farms Unsweetened Almond Milk
+ 1/4 cup Wedderspoon Raw Manuka KFactor 16 
(substitues: maple syrup, any other honey)
+ 1 tsp. Trader Joe's Pure Bourbon Vanilla Extract
+ 3/4 cup Bob's Red Mill Coconut Flour  
+ 1 1/2 tsp. Further Food Daily Turmeric Tonic (see below for discount code)
+ 1 scoop Further Food Collagen Peptides Protein Powder (optional)
+ 1/2 tsp. Trader Joes's Ground Ginger  
+ 1/2 tsp. baking soda
+pinch of salt

OPTIONAL TOPPINGS: unsweetened coconut flakes, fresh fruit,
cocoa nibs, or fresh herbs 


+ Preheat oven to 350 F
+ Prepare the bread loaf pan by spraying with nonstick cooking spray. I prefer
to use Chosen Foods Coconut Oil Spray!
+ In a large mixing bowl, whisk together the eggs, almond milk, honey, extract, and salt
until the mixture appears bubbly.
+In a separate mixing bowl, sift together the coconut flour, turmeric, ginger, and baking soda.
+ Slowly start to fold half the dry ingredients into the wet ingredients to combine, then slowly add the remaining ingredients and mix.
+ Transfer the batter into a bread loaf pan and place in the oven.
+ Bake at 350 F for 30 minutes or until golden brown.
+ Remove from the oven and let the loaf cool for a few minutes, then
add your preferred topping.

Serve and enjoy!
